I've been vegetarian for maybe 15 years? here are some experiments in plant based cookery



EASY SEITAN

the first seitan recipe I ever followed involved a lot of different ingredients and was sort of hard to make. so I stopped making it. and then I realized that you can make seitan with 2 ingredients so I've been making it again!

recipe: 1 part vital wheat gluten (VWG) to 1 part veg broth

this is so easy. I tend to make a single serving, which is 1/4 cup VWG mixed with 1/4 cup veg broth. mix the two together, along with any other spices you want to add (sky is the limit etc). then transfer to a cutting board dusted with VWG, and knead for about 5 minutes.

once kneaded, bake at 350 F for 20-25 minutes. it should bubble up at the end (like bread!) and then deflate once you take it out. then I like to crisp it up in a pan and serve it with whatever veggies/sides I'm having. easy! you can make a single serving, or make a whole bunch all at once.

HARD SEITAN

this is the seitan recipe I used to use. it's very good, just a lot more intensive than the above recipe.

  • 1 1/2 c vital wheat gluten
  • 300 g silken tofu
  • 2 tbsp water
  • 2 tbsp nutritional yeast
  • 1 tbsp onion powder
  • 1 tsp veg bouillon
  • 1 tsp garlic powder
  • 1/2 tsp salt
  1. combine all ingredients into a ball of mush
  2. evenly divide the ball into ~6 pieces. dust a clean surface with VWG. spread the pieces into a chicken tender sort of shape (shaped like california. or finland).
  3. set up a steamer. heavily grease the steamer and seitan pieces or they will stick to each other. steam for 25 minutes, flipping halfway through.
  4. cool for at least one hour before using.
  5. grill, pan-fry, reheat however you'd like!

again, this recipe produces some very good seitan. the steaming part if just annoying to deal with. I wonder if these can be baked instead. I should try that.
